Vegetable Dishes
Ingredients:
- 3 cups of cooked white beans
- 1/2 cup of finely chopped radicchio or red cabbage
- 1/2 cup of finely chopped cilantro
- 1/2 cup of finely chopped flat leaf parsley
- 3 finely chopped spring onions
- 1 tsp of salt
- 2 tsp of apple cider vinegar
- 3 tbsp of olive oil
- 2 tsp agave syrup
- 1 tsp of dijon mustard
Steps:
- In a small bowl combine the salad dressing ingredients and mix well
- Combine the beans and other salad ingredients in a medium salad bowl
- Pour the dressing over the salad and mix
- Serve
