Turkey & Butternut Balls

Ingredients:

  • 1 lb of ground turkey thigh meat
  • 1 cup of roasted butternut squash
  • 1/2 cup of roasted sweet potato
  • 1/3 tsp of salt from home made preserved lemons
  • 1 tsp of fresh ground coriander seeds
  • 1 tsp of fresh ground fennel seeds
  • 1 tbsp of herb de provence
  • Steps:
  • Pre heat oven to 375
  • Cut a butternut in half length wise
  • Place in a roasting pan face down with a half cup of water
  • Roast for 30 - 45 mins
  • Add a whole white skin sweet potato
  • Continue cooking both for another 45 mins or until both the squash and the potato are soft
  • Allow to cool
  • Scoop out any remaining seeds from the squash
  • Peal both,
  • Chop roughly
  • Place 1 cup of squash and a half cup of the sweet potato into a large mixing bowl
  • Add the spices and salt
  • Add the ground turkey
  • Mix well
  • With your hands roll mixture into small balls
  • These can either be pan fried (10 mins on medium heat)
  • or Oven roasted (20 mins at 375F)
