Dips, Appetisers & Finger Food
Ingredients:
- 1 lb of ground turkey thigh meat
- 1 cup of roasted butternut squash
- 1/2 cup of roasted sweet potato
- 1/3 tsp of salt from home made preserved lemons
- 1 tsp of fresh ground coriander seeds
- 1 tsp of fresh ground fennel seeds
- 1 tbsp of herb de provence
- Steps:
- Pre heat oven to 375
- Cut a butternut in half length wise
- Place in a roasting pan face down with a half cup of water
- Roast for 30 - 45 mins
- Add a whole white skin sweet potato
- Continue cooking both for another 45 mins or until both the squash and the potato are soft
- Allow to cool
- Scoop out any remaining seeds from the squash
- Peal both,
- Chop roughly
- Place 1 cup of squash and a half cup of the sweet potato into a large mixing bowl
- Add the spices and salt
- Add the ground turkey
- Mix well
- With your hands roll mixture into small balls
- These can either be pan fried (10 mins on medium heat)
- or Oven roasted (20 mins at 375F)
