Ingredients:
6 Red Pepper
3 Cloves of Garlic
1 medium potato
4 Tbsp of Olive Oil
4 Cups of Broth
1/4 tsp of salt
1/4 Cup of Parsley
Steps:
Boil the potato until tender.
Leaving the Garlic and Peppers 'whole' roast them at 400F, until the peppers are completely blackened on all sides
Remove from the oven and peel both the peppers and garlic (once cool enough).
Liquidize peeled peppers, garlic, broth, olive oil, salt - completely
Add the cooked potato and parsley and briefly liquidize (don't liquidize potato for too long or it becomes slimy).
