1/2 lb of fresh salmon (or canned salmon if you can't get fresh)
1/2 lb of hot smocked salmon (not the cold smoked type which will lose its flavor when cooked)
1/4 cup of chopped fresh dill
1/4 tsp of horseradish sauce.
1 tsp of dijon mustard
2 tsp of capers
grated rind of one lemon
1 large tsp of dried dill
1/2 tsp of salt
1 medium red onion
1 carrot
1 stick of celery
2 eggs (this recipe will still work without the eggs, although it will be a little more fragile)
1 pack of gelatin (soaked in about 1/4cup of carrot or apple juice)
3 slices of gluten free bread (this is about 1 cup when toasted and ground into crumbs)
1 small sweet potato - grated. (just over 1 packed cup when grated)
Juice of 1 lemon
3 tbsp of olive oil
1/4 cup of high heat oil - grapeseed ghee or coconut.
Steps:
Pre heat oven to 400F
Scale salmon skin
Place salmon skin side up in a oven proof dish
Pour two tbsp of lemon juice over salmon
Pour 2 tbsp of olive oil over salmon
Sprinkle 1 large pinch of salt over the salmon
Sprinkle a couple of large pinches of dry dill weed over the salmon
Place in the oven for 9 - 14 mins depending on thickness (it should be just under cooked (soft and breakable but still bright pink )
While the salmon cooks....
Very finely chop the onion and celery
Grate the sweet potato and carrot
Sautee onion until golden brown and translucent and set aside
Toast / Grill the gluten free bread until totally dry (this might require careful grilling to avoid burning)
Then chop the bread in a food processor into fine bread crumbs
Chop the smoked salmon into very small pieces (removing any bones)
When the baked salmon is cooked, remove from the heat and allow to cool for 10 mins apx
Mash or chop the baked salmon carefully removing any bones
Whisk the eggs
Chop the fresh dill very fine
Mix all of the ingredients together in a large mixing bowl
Using your hands, form the mixture into patties (apx 3 - 4" across or 1 - 2" for canapé sized patties)
Arrange on a baking sheet or a couple of large oven proof dishes with another 1/8 cup of high heat oil (you might need a little more oil if using two dishes)
Place in the oven at 390F for 20 mins for small patties for - 30 mins for larger ones.
The patties are done when they are golden brown all over.
Remove and place on paper towels to drain
Arrange on serving dishes or freeze between layers of wax paper for later use.
