Salad Nicoise, is one of my favorite salads. Complex, rich, satisfying and packed with fabulous ingredients. This is our family variation on it.
Ingredients:
1/4 lb of arugala
1/4lb of mixed baby greens
4 large fresh eggs
I large head of broccoli
1/4 cup of cranberries
2 tbsp sunflower seeds
2 tbsp of pumkin seeds
6 olive oil preserved anchovies
3 or 4 tablespoons of olives
1 cup of cherry tomatoes
1/4 cup of your favorite vinaigrette. We use our honey mustard lemon vinegrette. (see pantry / useful ingredients)
4 slices of gluten free bread toasted
2 tbsp of olive oil
1 tbs of flax seeds
1 tsp of chia seeds
Omit bread for anti inflammatory version of this salad.
