Ingredients:
4 or 5 lettuce leaves per person - washed
1 small radiccio - thinly sliced and diced
1 heirloom tomato - thinly sliced
4 slices of smoked duck per person
2 - 3 slices of prociuto / parma ham per person
Confit of duck - 1 deboned thigh for 2 people is plenty in this context
Gluten free toast
Dressing:
1 teaspoon of good dijon mustard
1 teaspoon of honey
2 tablespoons of olive oil
2 tablespoons of red wine vinegar
Big pinch of salt
Steps:
Salad
Arrange ingredients on each plate.
Dressing:
Combine ingredients in a small bowl, stiring vigorously
Drizzle over each salad.
