Vegetable Dishes
The farmer's market this morning was lovely. Summer is settling in to her stride and the produce was looking particularly beautiful. The organic parsnips were an unusual find. Parsnips suffer from pests rather badly so parsnips this fresh and perfect are unusual.
Ingredients:
- 1 small cauliflower
- 1 large sweet potato (white skin, white flesh or japanese sweet potato with red skin and white flesh)
- 5 large radishes
- 3 large parsnips
- 1/3rd cup of olive oil
- 1 tsp of salt
- 3 tsp of coriander seeds
- 2 tsp of ground coriander seeds
Steps:
- Preheat oven to 375F
- Cube the sweet potatoes, radishes and parsnips, cutting them into 1/2" - 3/4" chunks
- Roughly chop the cauliflower
- Put them into a large oven proof dish
- Pour the salt, oil and herbs over them
- Place into the hot oven for 40 mins.
