Roasted Delice Squash

If you have never tasted Delice squash you are in for a real treat. These little yellow striped oblong squash roast beautifully. When cooked they are as sweet as candy with a little crunch and a little gooey center, rather like the perfect cookie... but a vegetable. I add the tomatoes to give a little acid lift. Its a great combination.

Ingredients:

2 -3 mid sized Delice squash - sliced into 1/4" slices.

1 cup of little orange cherry tomatoes, (red cherry tomatoes work too).

1 large red onion.

3 tbs of olive oil

2 tbs of coriander seeds

1/2 tsp of rough salt.

Steps:

Wash the squash and tomatoes

Pre heat the oven to 380F

Peel and rough chop the red onion

Slice the delice squash into 1/4" slices leaving the skin on.

Then with your finger tips push out the seeds from the center

Put the onions into a lightly oiled flat bottomed oven proof dish

Arrange the slices on top.

and the tomatoes on top of the squash.

Sprinkle with olive oil, coriander seeds and salt.

Place in the oven for 30 - 40 mins. or until lightly browned.

NOTE: If you find that you need an extra few minutes watch them carefully because the sugar content of the squash causes them to burn rapidly after a certain point.
