I like to add veggies where ever i can.
Ingredients:
- 1/2 cup little green / black lentils
- 1/2 cup brown rice
- 2 cups of rich stock (veggie, beef or chicken are all fine)
- 1 tsp salt
- 1 large onion
- 2 sticks of celery
- 2 zucchini
- 2 carrots
- 1 tsp dried thyme
- 1 tsp dried tarragon
- 1 tsp dried marjoram or oregano
- 1 tsp dried parsley
- Fresh parsley to taste (i tend to put about half a cup of chopped fresh parsley in the dish plus a few sprigs for the garnish).
- Juice of 1/2 lemon
- 3 tbsp of olive oil
Steps:
- Finely chop the veggies
- In a frying pan sautee the veggies with the dried herbs and the olive oil
- Put the sauteed veggies, rice, lentils and salt in a large pot with the stock and cook for 45 mins
- Fold in the lemon juice and chopped parsley
- Serve and garnish with a sprig of parsley
