Rice and Lentils with Veggies

I like to add veggies where ever i can.

Ingredients:

  • 1/2 cup little green / black lentils
  • 1/2 cup brown rice
  • 2 cups of rich stock (veggie, beef or chicken are all fine)
  • 1 tsp salt
  • 1 large onion
  • 2 sticks of celery
  • 2 zucchini
  • 2 carrots
  • 1 tsp dried thyme
  • 1 tsp dried tarragon
  • 1 tsp dried marjoram or oregano
  • 1 tsp dried parsley
  • Fresh parsley to taste (i tend to put about half a cup of chopped fresh parsley in the dish plus a few sprigs for the garnish).
  • Juice of 1/2 lemon
  • 3 tbsp of olive oil

Steps:

  1. Finely chop the veggies
  2. In a frying pan sautee the veggies with the dried herbs and the olive oil
  3. Put the sauteed veggies, rice, lentils and salt in a large pot with the stock and cook for 45 mins
  4. Fold in the lemon juice and chopped parsley
  5. Serve and garnish with a sprig of parsley
