A sweet side for the holidays. It goes wonderfully with a Turkey or Goose dinner. This old favorite is a healthy and inexpansive way to feed the multitude. It always elicits ums and ahs of satisfaction and delight.
Ingredients:
1 small red cabbage
1/2 cup walnuts
1 large onion
1 large apple / pear or asian pear
1/2 tsp of caraway seeds
1 tsp of fennel seeds
3 cloves
2 juniper berries
1/4 - 1/2 cup of raisins (i like the big sultanas)
1/2 tsp of salt
1/2 cup of juice (i used pomegranite but apple or pear would be just fine).
2 tbsp of olive oil
1/4 cup of sherry
Steps:
Chop the onion
In a medium wok or large deep pan sautee the chopped onion with the olive oil until transparent and tender. (cover and cook slowly on a med / low heat to avoid sticking and burning).
Chop the red cabbage and the apple
Add the chopped cabbage and apple to the cooked onion.
Add the raisins, sherry, juice, spices and salt.
Cover and cook for 15 - 20 mins on medium heat, until the cabbage is tender and the flavors have incorporated.
Add the walnuts and serve.
