First thing that you should know about quiche is that it is ridiculously easy and makes one of the fastest 'gourmet' meals you can make. I tend to pack it full of what ever i have that goes well with egg. The one pictured had a lot of different ingredients packed into it: sundried and fresh tomatoes, shitake and green olives, spinach, df feta and smoked duck.. well this is the gers after all.

Ingredients:

One pre made gf round pie base - no shame in using store bought pastry if its this good.

7-8 medium sized eggs (about 14 fluid oz give or take)

and about 10 fluid oz of a mix of coconut cream and what ever df milk you use

I used a little over 1/2 cup of coconut cream

and 3/4 cup of cashew nut milk.

1/2 teaspoon of salt (lemon salt if you have it is a really good way to go).

1/2 teaspoon of fresh thyme leaves

1/2 teaspoon of fresh oregano leaves - minced

1 clove of garlic - mashed (optional)

1/2 teaspoon of dijon mustard

fresh ground pepper to taste

And then what ever you want to fill it with -

This one had 4 large shitake mushrooms - washed and sliced

a dozen green olives

1/4 cup of diced or crumbled df feta cheese

1.5 - 2 cups of baby spinach leaves

5 sundried tomatoes - sliced

6 cherry tomatoes

1/4 cup of diced smoked duck or bacon

Steps:

Preheat the oven to 200F

Arrange the pastry in the bottom of a pie dish

Break the eggs into a mixing bowl

Whisk briskly

Add herbs and spices, mustard, garlic, coconut and cashew milk.

Arrange the solid fillings in the pie shell

Pour over the egg mixture

Place in the oven for 25 - 30mins if its a shallow pie dish like mine, or 30 - 40mins if its a deeper one.
