Duck Duck Duck

Peking Duck (naturally gluten and dairy free).

Ingredients:

  • Cinnamon 2 tsp
  • Pepper 1 tsp
  • Nutmeg 1/2 tsp
  • Clove 3/4 tsp
  • Ginger (dry) 1 tsp
  • 5 Spice 1 tsp
  • Allspice 1 tsp
  • Cardamom seeds 1/2 tsp
  • Star Anise x 3 stars
  • 4 tbsp of soy sauce

Steps:

  1. Grind spices in a coffee grinder (dedicated for spice grinding)
  2. Rub Interior Cavity of duck with ground spices
  3. Bring very large stock pot of water to the boil
  4. Dunk the duck in boiling water 10 times for 10 seconds each time, with 2 min cooling intervals.
  5. Rub exterior and interior of duck with spices mixed with soy sauce
  6. Refrigerate over night
  7. Preheat oven to 275F
  8. Bake the duck in a large roasting pan for 2.5 hours at 275F
  9. With a second roasting pan of warm water on the bottom shelf of the oven.
