A heavenly orange sponge cake that makes a festive and luxurious addition to any meal.
Ingredients:
- 2 Oranges
- 6 Eggs
- 3/4 cup of agave nectar or honey
- 2 cups of almond flour
- 1/2 tsp of salt
- 1 tsp baking soda
- 1 cup of dairy free cream cheese
- 1 cup of icing sugar
- 3 drops of orange essence
- candied orange or kumquat peel
Steps:
- Wash the oranges and boil them whole (peel and all) for 1 ½ hours, or until soft
- Preheat oven to 375 F
- Liquidize soft cooked oranges in a liquidizer or food processor until smooth
- Add the eggs agave adn almond flour, salt and baking soda to the liquidized oranges, and buzz until fully combined.
- Pour the orangey batter into a parchment lined and greased 9 inch cake tin.
- Cover with a circle of parchment
- Bake at 365F - 375F for 45-50 minutes
- Using a toothpick or thin knife test to make sure that it is fully cooked (when inserted into the center of the cake the toothpick should come out clean)
- Cool in the pan for 2 hours
- Optionally ice the cake with dairy free cream cheese and icing sugar (1 cup of dairy free cream cheese and 1 cup of icing surar with 3 drops of orange essence). Decorate withcandied orange peel
- Serve
