I'm loving Nastutium season and looking for ways to use the abundance of nasturtium leaves and flowers in my garden.
This dish happened by accident. I had a bunch of Nasturtium flowers and leaves on my dining table and was eating a smoked trout sandwich that needed a little something extra. I looked up and low and behold there was the perfect something extra.
Ingredients:
- Smoked salmon or trout
- Gluten free bagel or bread (we have been loving the gf sprouted seed sourdough loaf from grindstone bakery)
- 1 or 2 large Nasturtium leaves per sandwich
- 1 Nasturtium flower per sandwich
- 1/2 tsp of olive oil
- a squeeze of lemon juice
- 3 or 4 capers
Steps:
- Build your sandwich
- Eat.
