Mustard Greens with Dried Plums & Pumpkin Seeds

As I have mentioned in some of my other posts - we eat a lot of steamed greens, so i'm always looking for great ways to dress up this dish.

You can try this with any available leafy green veg like kale, chard, collard greens or even broccoli rabe, but when mustard greens are available (they have quite a short growing season), I can't get enough of them.

Ingredients:

  • 2 large bunches of mustard greens
  • 4 tbsp pumpkin seeds
  • 1/4 cup of fresh squeezed lemon juice
  • 1/2 tsp salt (or salt from your preserved lemons if you have them)
  • 4 tbsp olive oil
  • 8 plump prunes (dried plums)

Steps:

  1. I like to cut out the woodiest part of the mustard green's stems
  2. Chop into narrow strips
  3. Prepare a steamer with a couple of inches of water in the bottom - bring the water to the boil
  4. (or if you don't have a steamer you can just put the greens in a pan with an inch of water in the bottom - taking care that the water doesn't boil away before the greens are done).
  5. Put the greens in the steamer and steam or 5 - 7 mins
  6. Removing the greens from the heat, decant them into a single serving bowl or individual plates.
  7. Combine the lemon, olive oil and salt and pour over the steamed greens
  8. Mix gently to combine.
  9. Chop the prunes into very small pieces and sprinkle over the greens.
  10. Sprinkle the pumpkin seeds over the greens
  11. Serve
