French Classic Recipes
A tantalizing French classic.
Ingredients
- 3lb of fresh raw mussels
- 1 large bunch of parsley
- 1 medium onion
- 3 sticks of celery
- 3 carrots
- 2 cups of broth (veggie or fish)
- 1/2 - 3/4 of a bottle of white wine
- 1/4 tsp of salt
- 2 tbsp of Herb de Provence
- 2 tablspoons of olive oil
- Wash the mussels in cold water (removing any cracked or open ones. They should all be tightly closed. Throw away any that are not)
- Finely chop all of the vegetables (excluding parsley)
- Fry the chopped onions and veggies in the bottom of a large stock pot with the herbs and olive oil.
- After 5 mins or when barely tender add the mussels, stock and white wine.
- Wash and chop the parsley.
- Cook for 5 mins or until they are all open.
- Add the fresh chopped parsley.
- Serve immediately
- They are very nice served with french fries.
