French Classic Recipes

A tantalizing French classic.

Ingredients

  • 3lb of fresh raw mussels
  • 1 large bunch of parsley
  • 1 medium onion
  • 3 sticks of celery
  • 3 carrots
  • 2 cups of broth (veggie or fish)
  • 1/2 - 3/4 of a bottle of white wine
  • 1/4 tsp of salt
  • 2 tbsp of Herb de Provence
  • 2 tablspoons of olive oil
  1. Wash the mussels in cold water (removing any cracked or open ones. They should all be tightly closed. Throw away any that are not)
  2. Finely chop all of the vegetables (excluding parsley)
  3. Fry the chopped onions and veggies in the bottom of a large stock pot with the herbs and olive oil.
  4. After 5 mins or when barely tender add the mussels, stock and white wine.
  5. Wash and chop the parsley.
  6. Cook for 5 mins or until they are all open.
  7. Add the fresh chopped parsley.
  8. Serve immediately
  • They are very nice served with french fries.
