To my great surprise my kid loves this salad.. and he is not usually into our raw salads. But he does love carrots, lemon and maple syrup and this salad has all three.
Ingredients:
- 2 cups grated of finely chopped or grated red cabbage (about a half of a very small head of red cabbage)
- 1 cup finely chopped or grated green cabbage (about a quarter of a very small head of green cabbage)
- 1 small fennel bulb finely chopped or grated
- 1 cup of finely chopped flat leaf italien parsley
- 4 medium carrots
- 2 sticks of celery
- 1/2 cup walnuts
- 1/2 cup sunflower seeds
- 2 tbsp of flax seed oil (with added lignans if you can find it)
- 2.5 tbsp of apple cider vinegar
- 1/2 tsp salt
- grated rind of one large organic lemon
- 1 tablespoon of grated fresh ginger
- juice of half a lemon
- 1/4 cup of olive oil
- 1 large tbsp of almond butter
- 1/4 tsp of toasted sesame seed oil
- 3 tbsp of maple syrup
Steps:
- Mix the dressing ingredients thoroughly
- Finely chop or grate the cabbage, fennel, celery and carrots
- Finely chop the parsley
- Combine in a large serving bowl with the nuts and seeds
- Pour the dressing over the salad and mix well.
