Ham & Pea Soup

A great winter warmer. Full of ham hock smokey goodness and loads of vegetables too :)

Ingredients:

2 small ham hocks

1 large onion

5 medium carrots

4 celery sticks

1 cored and chopped apple

1 cup of yellow split peas

1 cup of green split peas

2 tablespoons of Herb de Provence

large pinch of salt.

2 tbsp of olive oil

2 finely chopped cloves of garlic (optional)

32 fluid oz of broth

1 cup of water

1 large can of diced tomatoes (no spices).

1 bunch of parsely

Step by Step:

Chop the onion, celery and carrots

Add to a large heavy bottom stock pot with the olive oil herbs and ham hocks.

On medium high heat

Allow to brown lightly for 10 mins.

Add all of the other ingredients except the parsley and cover the pot.

Turn the heat down a little (medium heat).

Cook for 2 hours stirring occasionally.

Serve with garnish of finely chopped parsley (1 tbsp per serving).
