Greens with Mango & Preserved Lemon

I love eating steamed greens - chard, mustard greens, kale, dino kale, collard greens. My digestive system loves them and they make me feel alive. Eating steamed greens almost every day, I have a variety of ways to prepare them, (and make them a little more interesting for the less hard core greens eaters ;)

Ingredients:

  • Rainbow Chard (one bunch) - or any other type of greens.
  • 3 pieces of dry mango
  • 2 tbsp of cranberries
  • 1/4 preserved lemon
  • Juice of 1/2 lemon
  • 1 tblsp of pine nuts
  • 1/4 tsp salt
  • Pepper to taste
  • 2 tbsp of olive oil
