Green beans & Caramelized onion

Ingredients:

  • 2 large handfuls of fresh green beans
  • 2 tbsp of pine nuts
  • 1 medium onion
  • 4 tbsp of olive oil
  • Juice of half a lemon
  • 1/2 tsp of salt
  • 1 tsp of herb de provence

Steps:

  1. Finely chop the onion
  2. Put in a frying pan and cover for 10 - 15 mins
  3. Add 1/4 tsp of salt
  4. 1 tsp of herb de provence
  5. Sautee in 2 tbsp of olive oil until caramelized

  6. Fill a medium saucepan with 1 inch of water
  7. Put on medium heat
  8. Wash, top and tail the green beans
  9. Put them into the saucepan and cook for 5 mins or until just tender

  10. Pre heat a dry frying pan for 2 mins,
  11. Then add the pine nuts
  12. Stirring constantly for 2 mins until they begin to brown.
  13. Combine the beans, onions and pine nuts, add the lemon juice and salt
  14. Serve
