Vegetable Dishes
Ingredients:
- 2 large handfuls of fresh green beans
- 2 tbsp of pine nuts
- 1 medium onion
- 4 tbsp of olive oil
- Juice of half a lemon
- 1/2 tsp of salt
- 1 tsp of herb de provence
Steps:
- Finely chop the onion
- Put in a frying pan and cover for 10 - 15 mins
- Add 1/4 tsp of salt
- 1 tsp of herb de provence
- Sautee in 2 tbsp of olive oil until caramelized

- Fill a medium saucepan with 1 inch of water
- Put on medium heat
- Wash, top and tail the green beans
- Put them into the saucepan and cook for 5 mins or until just tender

- Pre heat a dry frying pan for 2 mins,
- Then add the pine nuts
- Stirring constantly for 2 mins until they begin to brown.
- Combine the beans, onions and pine nuts, add the lemon juice and salt
- Serve
