This simple and delicious little spiced cookie recipe is ideal for shaping with cookie cutters - an activity that has been very popular with our little boy, since toddler hood.
This recipe makes about a dozen x 2" - 3" cookies.
Ingredients:
1/3 cup of almond flour
1/3 cup of brown rice flour
1/3 cup of chestnut flour
1/3 cup of potato starch
1 tbsp of arrowroot starch
1/4 cup of coconut sugar
1/4 cup of date sugar
1 - 2 tablespoons of honey
pinch of salt
1/2 tsp of baking soda
1 tbsp of vanilla extract
1 level tsp of cinnamon
1/2 - 1 tsp of ground ginger
1/2 tsp of mace
pinch of ground clove
pinch of ground cardamom (optional).
1/4 cup of cold nut milk (or cold almond turmeric chai)
1/3 cup of veggie shortening, or coconut oil (melted)
Steps
Note: Cookies eaten warm will still be a little soft, once cooled they will be crispier.
