German Potato Salad

Potatoes

Ingredients

  • Small Yellow Potatoes
  • 1 fennel bulb
  • 6 spring onions / scallions
  • 3 eggs
  • 1/2 bunch of cilantro
  • 1/2 bunch of parsley
  • 1/2 bunch of fresh dill
  • 3 medium sweet dill pickles (or 8-10 cornishon)
  • Dressing Ingredients:
  • 1 heaping large tbsp of mayo
  • 1 tbsp agave
  • juice of 1 lemon
  • 1/2 tsp salt
  • 1/2 tsp dijon
  • 1 tsp dry dill weed

Steps:

  1. Wash and boil the potatoes until tender (apx 15 mins)
  2. Hard boil the eggs (5 mins)
  3. Finely chop the parsley, cilantro and dill
  4. Chop the fennel bulb and spring onions / scallions
  5. Finely chop the pickles
  6. In a small bowl combine all of the dressing ingredients together.
  7. Chop the potatoes into halves or quarters
  8. Chop the eggs (chunky or fine is up to you)
  9. In a large salad bowl mix all of the ingredients together with the dressing.
  10. Serve

Variation:

To make a complete meal of it, you can finely chop some ham or sausage into the salad.
