Potatoes
Ingredients
- Small Yellow Potatoes
- 1 fennel bulb
- 6 spring onions / scallions
- 3 eggs
- 1/2 bunch of cilantro
- 1/2 bunch of parsley
- 1/2 bunch of fresh dill
- 3 medium sweet dill pickles (or 8-10 cornishon)
- Dressing Ingredients:
- 1 heaping large tbsp of mayo
- 1 tbsp agave
- juice of 1 lemon
- 1/2 tsp salt
- 1/2 tsp dijon
- 1 tsp dry dill weed
Steps:
- Wash and boil the potatoes until tender (apx 15 mins)
- Hard boil the eggs (5 mins)
- Finely chop the parsley, cilantro and dill
- Chop the fennel bulb and spring onions / scallions
- Finely chop the pickles
- In a small bowl combine all of the dressing ingredients together.
- Chop the potatoes into halves or quarters
- Chop the eggs (chunky or fine is up to you)
- In a large salad bowl mix all of the ingredients together with the dressing.
- Serve
Variation:
To make a complete meal of it, you can finely chop some ham or sausage into the salad.
