This classic cold soup is perfect for summer time: Fresh and vibrant, with lots of hidden vitamins and detoxifying herbs. This version omits the cucumber because we have some cucumber allergies in the family, but feel free to add it.
Ingredients:
4 medium sized, ripe tomatoes
1 large red sweet pepper
1 medium orange sweet pepper
1 tsp salt
1.5 tbsp of salt
1 cup of fresh cilantro
1 cup of of fresh parsley
about 3 tbsp of fresh oregano
1 tsp of fresh thyme
24 oz of tomato juice
1 tsp of green tabasco sauce
2 scallions
Juice of 1 fresh lemon
1 tbsp of good balsamic vinegar
1/2 tsp of fresh ground pepper
Steps:
Liquidize all of the ingredients
Chill
Serve
