Cardamom Ice Cream

You might have heard of Dad's Cardamom, this is mum's Dairy Free version. A little less sweet and without the dairy, but just as delicious, rich and creamy.

Ingredients:

  • 5oz of fresh raw cashew nuts
  • 15 oz of filtered water
  • 15 oz of coconut cream (not water or milk - this stuff is the consistency of whipped cream)
  • 1/2 cup of sugar
  • 10 drops of stevia
  • 2 tbsp of ground cardamom seeds
  • 1 tbsp of vanilla extract
  • 1 packet of gelatin
  • You will need a very good food processor like a vitamix, and an ice cream machine.

Steps:

  1. Freeze your ice cream machine container over night.
  2. Soak cashew nuts for at least 4 hours
  3. Soak gelatin in a half cup of the filtered water for a few minutes
  4. Heat another half cup of the filtered water
  5. Add hot water to the gelatin, and stir until dissolved
  6. Liquidize the cashew nuts in the filtered water and gelatin. (This will be all 15oz of water)
  7. Add all of the other ingredients
  8. Buzz for 1 minute until smooth.
  9. Refrigerate mixture for 1 hour
  10. Place in the ice cream machine
  11. Follow manufacturer instructions to freeze ice cream.
