Braised Shallots in Tomato Sauce

An old favorite from my English childhood. Redolent with sweet Christmas memories.

Ingredients:

2 lbs of shallots

3 tbsp of good olive oil

4 cloves of garlic

30 fluid oz of tomato sauce

3 cloves (whole)

2 all spice berries

1 large tbsp of herb de provence

1/2 cup of raisins

1/2 cup of sweet sherry.

1/2 tsp of salt

Step by Step:

Peal the shallots (also works with pearl onions)

Peal the garlic cloves

Leaving both the onions and garlic whole put both into a large pan

Add the clove and all spice

Add the olive oil and cook on med / low heat for 10 - 15 mins turning every couple of mins.

When the onions are slightly browed all over..

Add the other ingredients: tomato sauce, salt, raisins and sherry.

Cover and cook for a further 40 mins to 1 hr, or until the onions are tender through, and the sauce has reduced down to a thick tomato base. Almost like a candied onion and tomato flavor.
