My 3 year old invented this desert. He decided that he wanted his grandmother's birthday cake to include my cardamom ice cream, blueberries, almond cake and meringue - so naturally i thought 'that sounds like a Baked Alaska' (his original design included animal crackers on top as well - although i will let you judge for yourself if it needs them;).

Ingredients:

6 cups of Dairy Free ice cream - See recipe for'Mum's Cardamom ice cream'

6 egg whites

1/4 cup of fine organic caster sugar (unbleached)

1 cup of fresh blue berries

1/2 cup of sherry or similar

Steps:

  1. You have to move fast with this recipe. The ice cream will not melt in the broiler - at least not as much as you might imagine - but it will melt on the way to the table.
  2. Preheat oven to grill / broil 'high'
  3. Whisk egg whites to stiff peaks
  4. Add sugar and combine
  5. Place cake on an oven proof serving dish
  6. Drizzle the sherry over the cake
  7. Put the ice cream on the cake and shape it to lay down more or less flat (it doesn't have to be pretty because it will be covered up)
  8. Press the berries into the ice cream
  9. Pour the meringue over the ice cream and cake
  10. Roughly shape the meringue so that it covers the cake and ice cream
  11. Put in the grill for 30 s (or until golden brown)
  12. Remove from the oven and serve immediately.
