Avocado Lemon Mousse

Avocado Lemon Mousse

Ingredients:

  • 2 large avocados
  • Juice of 1 lemon
  • 2 packets of gelatin
  • 1/3 tsp salt
  • Pepper to taste
  • Lemon rind or Parsley for garnish
  • 1 cup rice milk or cashew milk
  • Individual ramekins or similar moulds
  • 4 tbsp of agave syrup
  • Steps:
  • Pour gelatin into the lemon juice and allow 4 - 5 mins to soften
  • Warm the milk
  • Mash or liquidize the avocados with the salt and pepper
  • Mix together the warm milk with the lemon gelatin mixture
  • Mix in the avocado and agave
  • Spoon the mixture into the moulds
  • Chill for several hours until set.
  • Turn out, plate and garnish
