We keep an entirely gluten and dairy free kitchen, with a leaning towards anti-inflammatory ingredients. So even if the recipe is for Lasagna or a classic Clafoutis, know that it is a fabulous gluten and dairy free version — without compromise on flavour. Given our location deep in Gascony, we cook with the finest local produce: Gers duck and foie gras, Madiran wine, Armagnac, local markets and seasonal vegetables. But you'll also find South East Asian, Indian and Middle Eastern flavours here, because good cooking is a worldly thing.
