SPRING at Château de Séailles

Deep in the South West of France, an ancient castle sits on a ridge top with views of the distant Pyrenees mountains. Overlooking valleys and woodlands, orchards and pastures, the Chateau is lushly encircled by nature. On this beautiful estate a lovely holiday rental / guest house welcomes families and friends to relax, and celebrate. Spring time is also when we offer our herb walks and permaculture introductions. It can still be a little cool at this time of year, but the magnificent diversity of medicinal plants on the property is truly at its height in May and June.

AUTUMN – The Season of Mellow Fruitfullness

Overlooking valleys and woodlands, orchards and pastures, the Chateau is lushly encircled by nature. On this beautiful estate a lovely holiday rental / guest house welcomes families and friends to relax, and celebrate. Fall / Autumn is the season of mellow fruitfulness here, when the harvest brings in not just the grapes of this famous St Mont wine region but also Armagnac’s celebrated brandy.

But there is so much more to the season than just wine and brandy. In September and October we harvest walnuts and chestnuts, apples and olives, mushrooms and sloe berries. At Chateau de Seailles we delight in the season of plenty and spend a great deal of time in our gardens and kitchens canning and jarring, making sloe gin and sloe armagnac, candied orange and chestnuts, traditional French honied spice cake, preserved apples and more. As we settle in for the winter, this is also the season when we begin to offer our weekend meditation classes for the local community and our guests.
